DIFC’s newest restaurant is rooted in third culture cuisine

Uncut will be launched at Al Fattan Currency House by Citadel Hospitality later this year.

Dubai, with its globally renowned degree of cultural and linguistic diversity, is no stranger to ‘borderless’ cooking (or third culture cuisine as it’s known in the culinary world). Jun’s, Moonrise, Mattar Third Culture Barbecue — a number of restaurants has earned a loyal following for entirely original dishes that are not limited by geographical or cultural constraints.

Uncut at Al Fattan Currency House

Now, a new culinary destination by the name of Uncut is following suit, opening its doors at Al Fattan Currency House in DIFC later this year. Reflecting the spirit of exploration, this concept by Citadel Hospitality will offer a dining experience where generational recipes tell stories, and every visit is a journey through cultures and time-honoured flavours. Rooted in the concept of third culture cuisine, Uncut will celebrate the evolution of global dining, with diverse food influences merging to create dishes rooted in nostalgia and driven by unexpected flavour combinations — each plate a tribute to tradition and the beauty of shared cultural experiences, they say.

Accommodating 160 guests, the outdoor terrace draws inspiration from the ancient Silk Road, evoking maritime travels with bohemian textures and exotic spices. Inside, the journey continues with interiors reminiscent of the iconic Orient Express, reflecting timeless travel, where cultures come together and flavours merge. Cleverly created, the experience flows from the outside in — ethereal projections and immersive design elements will create a wonderful outdoor experience, while indoors, soulful jazz and percussive grooves will set the tone for a more intimate atmosphere for up to 80 diners.

From the food to the design, every detail tells a story. We believe in the power of connection through food and culture, and Uncut is a space where those connections can thrive.”
