Chef Himanshu Saini’s contemporary Indian dining experience is back with a new menu and a brand new location on Palm Jumeriah.

Fresh from being named the fourth-best restaurant in the MENA region at the Middle East & North Africa’s 50 Best Restaurants awards, the intimate yet innovative Trèsind Studio has vacated its dining room at VOCO Hotel and moved into a swanky new address at Nakheel Mall Rooftop. 

The glamorous new location boasts an expansive terrace amidst a vegetable and herb garden, plus a haven for mixology enthusiasts in the form of Papadom Botanic Bar. Yet despite these exciting new additions, everything you’ve grown to love about Trèsind Studio remains, from the upgraded 20 seater dining room offering every guest a front-row seat to the kitchen’s inner workings to the proficient service, led by charming restaurant manager Vipin Panwar.

The latest iteration of Chef Himanshu’s ever-changing menu offers some memorable new additions to complement a series of signatures from previous’ seasons.’ Here you can expect 17-courses of delightful Indian cuisine that will take you on a whimsical journey of flavour and texture, resulting in one truly unmissable dining experience.

Having broken down barriers when it comes to the perception of Indian fine dining, each new menu at Trèsind Studio has allowed the restaurant to reinvent itself, upping the ante to a point where international recognition has now proven fruitful.

Although we won’t spoil the surprises with a blow-by-blow account of each of Trèsind Studio’s memorable courses. The culinary journey begins with a unique wood-apple take on pani puri, before presenting an immaculately plated lamb and turnip kebab.

Highlights include the blossom chaat with pumpkin mash which remains a firm favourite thanks to its exquisite flavours and floral adornments, replete with pretty butterflies. Elsewhere, the tandoori chicken dumpling in a robust curry brodo offers a hearty dish that will leave you mopping the bowl for every last morsel. In contrast, the charred lobster tail with corn curry remains a beautiful ode to the gourmet crustacean, expertly pairing the delicate flesh of the lobster tail with the sweetness of the corn. 

New additions include the missi roti and papadum curry with cultured butter served in a delicate leaf and devoured as you would a taco. An inspired morel pulao presents guchhi mushrooms as small grains of rice in a risotto-like dish elevated by an Assam tea dashi.

Bold flavour combinations, playful plating and table-side theatrics combine in Le Jardin, a dish of aloe vera with cucumber broth resembling an edible garden. Acting as the perfect segue into the dessert courses, a dhokla chaat with buttermilk and papaya ice cream paves the way for a show-stopping finale that uses mountain honey presented on top of a moon sculpture, while ‘Fly Me to the Moon‘ by Frank Sinatra serenades diners through the overhead speakers.

Trèsind Studio continues to set the bar for dining in Dubai, offering a truly unique experience that you’ll be hard-pressed to find anywhere else in the city. With only 20 covers, Chef Himanshu and his team are able to explain the concepts and inspirations as they personally chaperone you through each course. 

As an easy contender for the title of the best restaurant in Dubai. Believe us when we say that we can’t wait to see what comes next. 

Trèsind Studio is open Tuesday to Sunday, offering seatings at both 6pm and 9pm. AED 595 per person (food only).
