The name Timofey Sulima brings with it a certain cachet — at only 24 years old, he became the youngest chef to receive the prestigious Bib Gourmand recognition from the Michelin Guide Moscow in 2022. Now, he has brought his acclaimed culinary equation to our shores, debuting a local counterpart to FLØR Moscow.
Taking up residence at The Ritz-Carlton in DIFC, FLØR Dubai replicates the intimacy and homelike feeling of its predecessor. Seating a maximum of 50 diners and embodying the essence of Scandinavian minimalism – inspired by the symbolic Ø – it places an emphasis on purity in terms of both design and flavour. And with Sulima at the helm, the restaurant introduces a distinctive gastronomic experience that seamlessly blends high-quality ingredients with his unique interpretation of modern cuisine, translating into refined yet approachable modern European cuisine.
On the menu are a number of signature dishes that speak to this, including Hokkaido scallops with verbena sauce (a delicate yet bold fusion of flavours) and cabbage steak (elevating a humble ingredient to a gourmet delight). Adding a refined twist on a classic dish is ravioli with duck, while a berries-and-beetroot dessert makes for a refreshing and creative take on natural sweetness.

Every Saturday and Sunday, guests can indulge in an exclusive brunch experience from 12pm to 4pm, where classic dishes are reimagined with unexpected flavour combinations and paired with a selection of expertly crafted cocktails.
