Following the success of The Beam, chef-restaurateur Nick Alvis has launched Blush Wine & Cocktail Bar.
There’s a new spot in Dubai’s cocktail scene, and it’s awash in colour: Blush Wine & Cocktail Bar. A brainchild of acclaimed restaurateur and chef Nick Alvis, it follows the success of The Beam and has taken up residence at Le Royal Meridien Beach Resort & Spa. Set to redefine the city’s bar experience, it introduces a unique, colour-inspired concept where guests don’t just taste their drinks — they experience them through sight, texture, and storytelling.
Blush is a celebration of mixology and aesthetics, where cocktails take centre stage in a visually immersive environment. Inspired by its name, each handcrafted cocktail is named after a colour, and paired with a custom swatch coaster featuring its exact hex code, making every sip a sensorial journey to both the vision and the taste buds. At its heart is a cocktail programme that goes beyond flavour. Each drink is designed to reflect the essence of its colour, offering a playful yet sophisticated twist on mixology. Signature cocktails aside, Blush features an exceptional wine selection, boasting over 110 wines by the glass, made possible through the Coravin preservation system. Premium wines will also be presented in Riedel performance range glassware.
Stealing the spotlight at the centre of the bar is the ingeniously built Gin Tree, allowing guests to hand pick their favourite gins from around the globe, and pair them with premium tonic waters. Branching out from the ‘trunk’ of the Gin Tree is the botanical inspired hand-painted ceiling mural. Blush’s philosophy revolves around colour and creativity, merging expertly crafted cocktails, an eclectic selection of wines with light, complementary bar bites inspired by Alvis’ travels around the world as well as his experiences in wine and tapas bars.
The venue is designed to captivate both cocktail connoisseurs and those seeking a stylish and Insta-worthy escape. Designed by LW Design as a botanical retreat, Blush embraces a garden-inspired aesthetic, seamlessly blending indoor and outdoor elements. The central circular bar serves as the heartbeat of the venue, offering guests a 360-degree view of the bartenders in action. Elevated seating with a backdrop of an extensive wine selection adds a touch of exclusivity, while antique mirror panels, hand-painted floral murals on the bar’s ceiling meticulously brushed by local artist Anthony Richardson, and bold graphic statement flooring create an understated yet striking setting. Looking ahead, Blush will host a variety of themed events and activations ranging from themed nights to tasting experiences.
