Infusing Middle Eastern stories with the flavours of traditional Nicaraguan cuisine.
Renowned for crafting extraordinary and intimate dining encounters throughout Dubai, Chef Gabriella Chamorro has joined forces with Fairmont The Palm for an exclusive series of dinners at Seagrill Bistro, the hotel’s beachfront Mediterranean restaurant.
Hailing originally from Nicaragua, Chef Gabriela, affectionately referred to as ‘Girl & The Goose,’ gained fame for her captivating culinary storytelling approach and inventive supper clubs, guiding guests on a multisensory odyssey using food as her artistic medium. Drawing inspiration from traditional Nicaraguan recipes and her extensive global expeditions, Gabriela’s menus reflect a harmonious blend of flavours and influences.
Chef Gabriela will embark on a four-day residency at Seagrill Bistro from 6 to 9 June. Tastemakers can indulge in an à la carte menu that combines cherished home recipes with inspirations from around the world. The emphasis will be on infusing Middle Eastern stories with the distinct flavours of traditional Nicaraguan cuisine. As a grand finale, on 9 June, she will curate a set menu where guests can savour the finest flavours accompanied by a carefully selected assortment of grape from the sommelier’s free-flow collection, as well as non-alcoholic beverages, all for the price of just AED 395 per person.
The menus presented will offer guests an array of antojitos, or “little cravings.” To commence this extraordinary culinary journey, diners can choose from options such as seabass ceviche with passion fruit and jalapeno, tuna tostada adorned with creamy avocado and a spicy emulsion, or chicken pibil dumplings topped with chimichurri sauce and a garnish of pickled ginger. The main courses will include Arroz Aguado featuring succulent scallops, coconut foam, coriander oil, and crispy sage. For a satisfying conclusion to the evening, guests will be treated to a classic tres leches dessert accompanied by caramelised pineapple and mango sorbet.
