After dominating 2021 with a series of enchanting culinary collaborations, acclaimed chef Himanshu Saini and his Trèsind Studio will be kick-start 2022 with Chef Jorge Vallejo of Mexico City’s Quintonil.
Three intimate collaborative dinners will take place at the intimate Trèsind Studio on 7, 8 and 9 January 2022, where diners will be treated to a selection of signature dishes from the much-lauded Vallejo, alongside a curated selection of new dishes by Saini.
After studying at the Culinary Center of Mexico, Chef Jorge Vallejo honed his craft in the kitchens of globally renowned restaurants, including Noma and Pujol, before striking out on his own. Vallejo opened Quintonil in Mexico City in 2012 and for ten years, the restaurant has been the centre of the dialogue that Vallejo has established about the history and current state of Mexico’s culinary tradition.

Quintonil has been listed on The World’s 50 Best Restaurants list since 2015, where it currently ranks number twenty-seven globally and eighth on Latin America’s 50 Best Restaurants list. Vallejo also holds the number forty-seven spot on The Best Chef Awards list 2021. Jorge Vallejo places much importance on the relationship between gastronomy and the environment, culture, and society, emphasising how this impacts Quintonil and the greater community.

Considered one of the youngest tastemakers in Indian cuisine today, Chef Himanshu has worked with many of the most acclaimed names in Indian cuisine. Commencing his culinary career under the mentorship of Chef Manish Mehrotra of award-winning Indian Accent in Delhi, Chef Saini went on to launch some of the most creative and groundbreaking concepts in India.
Chef Himanshu’s distinctive style is a mélange of global ingredients and modern cooking techniques with traditional Indian elements. With his expertise in traditional Indian food and cooking styles, Chef Himanshu has brought to Trésind, Carnival by Trésind, and A Cappella his unique understanding of the robust cuisine India has to offer. Chef Himanshu was recently voted no.75 on The Best Chef Awards in 2021 and is the highest-ranked chef in the Middle East.
In 2021 Trèsind Studio brought unique gastronomic guests to Dubai to deliver world-class culinary experiences at a time when global travel felt like a distant memory. These included much talked about collaborations with Ana Roš of Hiša Franko in Slovenia, Riccardo Camanini from Italy’s Lido 84, Manu Buffara of Brazil’s Ristorante Manu and Christopher Hardiquest of Bon Bon in Brussels.
