Fans of the Netflix series Chef’s Table may remember Italian butcher Dario Cecchini, who showcased his philosophy on food wastage whereby all cuts of meat are used for consumption and nothing is wasted.
His Carna by Dario Cecchini restaurant is situated on the 74th floor of the undeniably funky SLS Dubai Hotel and Residences and is the jewel in the five-star hotel’s already impressive crown.
For one night only on Tuesday, 4 January 2022, Carna will offer diners a special Dinner In The Dark experience that has been purposefully designed to amplify the senses. The restaurant will be transformed into an intimate sensory-driven environment with optional blindfolds provided to enable diners to become wholly immersed in the experience. Throughout the dinner, guests will be served an invigorating menu with a grape pairing that is bound to delight the palates of even the most discerning diners, while relying on the remaining senses – smell, touch, taste and sound.
Carna’s meat-driven menu honours the traditions of butchery, highlighting prime cuts of the finest meat and focusing on natural, fresh ingredients. Carna’s signature dishes include marinated grilled beef heart skewers, slow-cooked veal tongue, beef cheek, veal belly, oxtail and Chianti sushi. Adventurous diners can order the Bollito Cart, a cart of boiled meat served tableside, or for something less obscure, the Chateaubriand a la “Oscar” and bone-in New York striploin comes highly recommended.
The restaurant showcases modern design elements paired with bold, earthy tones and colours. The dining area offers you a warm welcome, thanks to jade-like bricks coupled with velvet green banquettes. Carna also features an ageing chamber where the finest cuts of beef are proudly exhibited and a private dining room for intimate gatherings.
Dinner In The Dark at Carna takes place on Tuesday, 4 January 2022, from 7pm. Prices from AED 549 per person.
