Atlantis The Royal will welcome a new restaurant next year, collaborating with luxury hospitality brand Major Food Group to bring New York’s Italian restaurant Carbone to the beachfront resort.
Carbone pays tribute to the mid-century, New York-style Italian restaurant, using top-tier techniques to elevate classic dishes like Caesar Salad, Chicken Scarpariello, Linguini Vongole, and Veal Parmesan. The Dubai menu will feature the restaurant’s renowned dishes, including the famous Spicy Rigatoni, all served by tuxedo-clad staff in a dining room reminiscent of 1950s New York. The stunning space will include velvety jewel-tone nooks, damask-upholstered walls with Venetian glass mirrors, a curated collection of fine artwork, and a lively terrace.

Carbone Dubai will be the ninth location in Major Food Group’s portfolio, following locations in Dallas, Doha, Hong Kong, Las Vegas, Miami, Riyadh, and two in New York City. Founded by Mario Carbone, Jeff Zalaznick, and Rich Torrisi, Major Food Group now operates over 50 restaurants, bars, private clubs, and hotels.
