From Latin America’s 50 best restaurants, SUCRE is now open in Dubai

From Buenos Aires to London, and now Dubai – Argentina’s hottest duo launches their third restaurant and bar in DIFC.

Born out of the ultimate partnership between world-renowned Master chef Fernando Trocca and mixologist Tato Giovannoni, SUCRE has opened its doors in Dubai’s International Financial Center, bringing a distinctly Latin American flavour to Dubai.

Since its original launch in 2001 in Buenos Aires, SUCRE has been coveted as a leading concept in contemporary Latin American cuisine, being featured in the Latin American 50 Best Restaurants.

Hailed as chef and master of open-fire cooking, Chef Trocca combines traditional open fire techniques from the South American continent with a breadth of global influences that have shaped the contemporary cuisine of his home city and inspired his restaurants across the globe while staying true to his heritage. He has built an international reputation for simple, stylish cooking combined with the architectural sensibility of his restaurants. The approach at SUCRE Dubai relies heavily on carefully sourced, high-quality ingredients prepared in exciting and unexpected arrangements – blending Italian, Spanish and Latin American influences.

Guests can expect an ever-evolving modern menu curated to offer a stylish simplicity to some of South America’s world-class choices ranging from classic King Crab Tostada to Argentinian Bone-In Ribeye and Squid Ink Paella – not to mention a punchy Monkfish Tail with XO Sauce and Empanadas with aged cheese and onions.

The bar is led by illustrious Argentinian bartender and owner Renato ‘Tato’ Giovannoni. Considered one of South America’s most celebrated bar operators and winner of the Altos Bartenders’ Bartender Award 2020, Tato has played an integral role in the success of SUCRE. Known for embodying the colour and sounds of 80s Buenos Aires, guests can expect a cocktail menu reflecting the spirit and rebellion of this period, featuring eccentric and passionate cocktail mixes.

Designed by Japanese architect Noriyoshi Muramatsu, the restaurant maintains a similar look and feel across all three venues – using a warm palette that nods to the brand’s heritage, combining the grandeur of Argentinian history with raw, industrial features and bespoke glass chandeliers. The large open-plan dining area is flanked by an open kitchen, allowing guests to catch glimpses of soaring flames from the various wood-fired cooking techniques.
