It’s time to get to know Chef Solemann Haddad’s 12-seater chef’s table.

Moonrise, the Michelin Guide award-winning restaurant that accommodates just 12 diners per sitting, is back for a new season. Overseen by Chef Solemann Haddad, Moonrise’s new menu draws inspiration from the vibrant culinary tapestry he encountered while growing up in 1990s Dubai, resulting in an 11-course menu of ‘Dubai Cuisine’.

The Moonrise menu features luxurious ingredients from across the globe, including Japanese hamachi, Hokkaido scallops, Wagyu beef, and generous amounts of caviar. However, Chef Solemann’s dedication to the highest calibre Middle Eastern produce remains, with labneh from Syria, locally sourced organic Sidr honey, Palestinian olive oil, and flavour-rich tomatoes cultivated by nearby farms.

Chef Solemann Haddad’s nostalgia-driven dishes include ’90s Alfredo’ (jalapeño and lobster claw ravioli with aged Parmigiano-Reggiano alfredo sauce) and ‘Abood Juice Cheesecake’ (white chocolate cheesecake, Alphonso mango, brown butter, and local honey gel).

Remaining on the menu by popular demand are Moonrise’s signature dishes: ‘Explosion’ (pani puri with foie gras, date syrup, saffron, and pineapple chutney) and ‘Grilled Cheese’ (36-month-aged Parmigiano-Reggiano, black pepper emulsion on Hokkaido milk bread with black garlic and truffle). Moonrise’s legendary Sarookh sauce makes a triumphant return, elevating a dish of Hokkaido scallop and Kaluga caviar to unparalleled heights.

As the gastronomic voyage culminates, diners are invited to relish the “Starry Night”, where soft illumination and smouldering wood conjure the laid-back ambience of desert evenings by the fire, leaving diners with a sensation of sitting beside a campfire under a sky full of stars.

Found inside Eden House in Satwa, the innovative 12-seater chef’s table concept finds itself at the crossroads of old and new Dubai. From one vantage point, the view opens onto the Dubai of Chef Solemann’s upbringing, while from the other, it extends over the Dubai that evolved in parallel with him. Moonrise, renowned for its harmonious blend of Middle Eastern and Japanese influences, guarantees a memorable meal high above the city.
