The latest culinary pop-up at Shangri-La Qaryat Al Beri, Abu Dhabi, will feature the first Arab BBQ pitmaster.
If you live in the capital, you’ll be excited to know that Shangri-La Hotel, Qaryat Al Beri has announced details about its next Culinary Master Series. Following the success of exclusive dining experiences with Chef Baptiste Renouard and Chef Chatchai Klanklong, the world’s first Arab pitmaster will be taking over the hotel later this month.
Renowned for his tender brisket and smoked meats, Hattem Mattar will light up the sandy shores of ESS Lounge as he treats diners to a must-try BBQ set menu this Ramadan.
Culinary enthusiasts are invited to sample a four-course menu that brings together the best seasonal produce from land and sea. Kicking off with a rendition of surf and turf that sees yakitori scallops wrapped in beef specks, followed by a charred elotes corn salad with lime, chilli, and feta cheese. The main course will feature short rib burnt ends served on the bone with a side of turnip mash, and accompanied by a grape and rocket salad. Finally, the evening will end with chef Mattar’s rocky road Atiyeh accompanied by burnt marshmallows on a honey graham cracker base.
Born and raised in an Egyptian household, Chef Mattar draws inspiration from his mother’s cooking style, with many of his signature dishes paying homage to his upbringing. His title as first Arab pitmaster has been earned through a love of regional flavours and an apprenticeship with Texas pitmaster Bryan Bracewell. Mattar’s culinary philosophy revolves around food and fire, bringing people together.
These dinners complement the exciting line-up of guest experiences at Shangri-La. Including its Ramadan Village, where an elevated Suhoor experience sees guests enjoy memorable evenings poolside, indulging in Chef Mattar’s signature a la carte menu.
The four-course set menu will be available from Wednesday 13 to Sunday 17 April 2022 at 7pm. AED 298 per person.
