The bold new restaurant will showcase the culinary mastery of Alexandros Sperxos at One&Only One Za’abeel.
Boldly Greek, unapologetically Sperxos — The Dish makes its debut at the ultra-luxurious One&Only One Za’abeel tomorrow, bringing with it a blend of Greek-inspired fusion cuisine and high-end culinary storytelling. The bold new restaurant encapsulates chef Alexandros Sperxos’ two decades of culinary mastery, seamlessly merging his Greek heritage with global influences to craft a new dimension of Greek-inspired cuisine.

The sleek open kitchen, where chefs cook over open flames, invites guests to witness the magic behind each plate. Beautifully presented dishes, with intricate details and delicate touches, create a multisensory experience that elevates dining to an entirely new level. We’re told that the menu reimagines Greek flavours with bold and elevated twists, each dish reflecting Sperxos’ wild creativity and passion, while showcasing the artistry and innovation that have defined his career.
You’ll begin with the Chargrilled Octopus, paired with fava bean mousseline and squid ink crisp before moving onto a modern twist on tradition by way of the Deconstructed Lamb Loin Souvlaki, which features fresh black truffle, homemade harissa, and tzatziki on a bed of microgreens. Diners can also choose from the rich flavours of Red Prawns Orzo Saganaki with feta cheese mousse and basil oil or the delicate Mediterranean Seabass Fillet, accompanied by seasonal vegetables, citrus celeriac velouté, and crispy celeriac chips for a textural contrast.

The Lamb Shank Trahana, meanwhile, is slow-cooked to tender perfection, paired with fermented pasta and kefalotyri foam for a rich and satisfying dish. For a truly indulgent experience, the Wagyu Beef Steak is served with a creamy baby potato gratin and charred cauliflower and topped with Chef Sperxos’ signature sauce. To conclude your meal, the Molten Portakalopita – a modern twist on a beloved Greek classic – comes highly recommended.

Chef Sperxos is renowned for his eccentric brilliance and transformative approach to dining. As the world’s first NFT chef and the visionary behind the UAE’s first glow-in-the-dark menu, his creativity has no bounds. Dedicating his career to placing Greek cuisine on the world map, he says, “This latest opening is not just a restaurant — it’s a journey across the Mediterranean and beyond. Each dish tells a story of my past and holds a personal meaning for me. It’s a reflection of my experiences, my heritage, and the flavours I’ve encountered on my travels. I wanted to create a place where tradition and innovation unite, offering guests a unique experience that speaks to both the heart and the palate.”
