Journey along the Ancient Silk Route at Aamara

The new restaurant at VOCO Dubai comes from the team behind the Michelin-starred Trèsind Studio.

Inspired by the ancient Silk Route and boasting flavours from the Far East to the Mediterranean, the newly opened Aamara is a restaurant offering more than just fusion cuisine.

Incidentally, the name Aamara, meaning “Forever Beautiful” in Arabic, “Immortal” in Sanskrit, and “Grace” in many parts of Africa, reflects the restaurant’s emphasis on elegance and finesse.

With Chef Malik Basha at the helm, Aamara’s menu boasts a variety of flavourful dishes from various regions along the Silk Route. Highlight dishes include the Chaat Sundae from Southern Asia, Crispy Okra with Turkish Yoghurt from the Middle East, Spinach and Shrimp Dumplings from Eastern Asia, and Malabar Shrimp Curry En Papillote with Lemon Rice from the Indian subcontinent. The menu also features fusion dishes such as Stuffed Pimento with Egyptian Rice, Buttermilk Curry, Palak Corn Burrata and Pickled Beetroot Onion.

Culminating with an elegant selection of desserts such as Opera Cake with Coffee Ice Cream, Pistachio Baklava and Saffron Ice cream, Aamara offers house-crafted beverages and an elevated dining experience that’s sure to leave a lasting impression.

Chef Malik Basha, Executive Chef at Aamara said, “We have embarked on a journey to create a menu that transports historical discoveries from the Silk Routes and fascinations into a new and evolving modern dining experience. And if you want to discover more about its history and want it to delight you with all its dishes, we are waiting for you at Aamara.”

The restaurant has introduced a limited-time five-course lunch menu to entice diners to try Aamara’s culinary offering. Expect an amuse Bouche of Hummus with Za’atar Pesto, Aamara Salad, Green Chilli Charcoal Chops with Shoestring Fries, and King Oyster Kushiyaki. The main course offers a choice between Palak Corn with Bocconcini or Lamb Nihari. The menu ends with Dulce Pannacotta served with Katafi Pastry and Cream Cheese Ice Cream and is priced at AED 95 per person (five courses).

Located in the VOCO Dubai on Sheikh Zayed Road, Aamara takes over the space formally occupied by Trèsind.
