Promising an explosion of flavours and the finesse of Japanese cuisine, this new addition to Dubai’s dining scene is poised to redefine beachfront dining with a captivating twist.
Under the helm of acclaimed chef Koyi Tanabe, SHIMA showcases avant-garde creations that marry the finest ingredients with artistic presentation. Born in Lima, Peru, to a lineage steeped in Japanese tradition, Chef Tanabe attributes his mastery of premium Japanese cuisine to the Matsufuji family. With 16 years of traversing the glob while collaborating with culinary luminaries across South America, Europe, and now the Middle East, Tanabe brings a wealth of experience to SHIMA.
The menu reflects a harmonious fusion of seasonal flavours, traditional ingredients, and global culinary techniques. From the meticulously crafted sushi to the tempting robata offerings, diners can indulge in signature creations such as the Chutoro Sogigiri, comprising chutoro slices, scallops, and mizuna leaves adorned with olive oil, spicy soybean paste, and orange supreme, or the Hamachi Nigiri elevated with mentaiko sauce, garlic confit, and yuzu skin.
For those craving hot delicacies, SHIMA presents standout dishes like the Ise Ebi Tempura, featuring lobster tempura crowned with black truffle and coral mayo, or the King Crab Leg, expertly prepared in robata with kanimiso, mirin hollandaise, Amalfi lemon gel, and togarashi.
